Pruning the vine in double guyots:

It is a pruning method favoring better exposure to the sun and optimal aeration of the grapes which allows a controlled yield for concentrated and complex wines.

Principles of pruning in double guyots:

  • Double guyots pruning consists of leaving two spurs on each vine.
  • Each bud bears one or two frank eyes, which are the buds which will give rise to the branches which will bear the grapes.
  • Arching and trellising: The branches are then attached to a wire, bending them into an arc shape.

Overripe harvest:

Over-ripening allows the grapes to naturally concentrate their sugars and aromas.

  • The filtration of lees allows natural clarification for clear and elegant wines and this stabilizes them by eliminating micro-organisms which could alter their taste and quality.
